Weekend Snapshot and Menu Plan Monday Dec 3


This is my second and there were LOTS of pictures to choose from this weekend. We were busy, busy, busy all weekend. We ended up seeing Santa 3 times!!! This one is from today when we went to the carousel after church. Kenzie walked right up to him and into his arms. Such a change from last year when she cried and cried and cried when I took her to see Santa at the store. My little squirt is growing up so much!

We did ok with our menu plan this last week. A couple days got jumbled around, but we mostly stayed on plan. The homemade pizza didn't happen, we ended up doing a Schwan's pizza instead. And we didn't do the turkey hot dogs because we went to the town Christmas celebration and had stew there instead.

Monday: Crock pot cooked roast with potatoes, carrots and onions. I saw roast on so many menus last week that I just had to put it on mine this week. I love roast and haven' t made it our whole marriage (about 3 1/2 years). Josh says he hates it, but I'm hoping this one will be good enough to change his mind because it's one of my favorite foods.

Tuesday: Chicken nachos...I'll just be cooking the chicken in a crock pot for several hours with picante sauce. Then we'll serve it on baked tortilla chips and add cheese and sour cream (fat free kind). I might see if our grocery store has an avocado that we can add to it...no guarantees at this little store. LOL!

Wednesday: Baked potatoes with deli ham, sour cream (fat free), cheese and pepper on top.

Thursday: Mini pasta shells with red sauce.

Friday: Crepes with ham and cheese or Nutella and bananas.

Saturday: Ramen Noodles...I know, I know...not healthy and a total cop out meal, but Josh is working and Kenzie loves them. If he comes home at some point for dinner I'll make him a sandwich or something.

Sunday: Fish sticks and low fat fries (Schwan's).

Cute picture! What a fun weekend! Your menu sounds good. I'm just trying to actually cook, whatever it takes JUST COOK! LOL I haven't had a full week where I actually cooked every day. I have stuff for pork chops, I really want to make those sometime this week, but we have alot of left over ham so we'll be eating tons of that! LOL

I used to make roast every Sunday so it'd be ready when we got home from church! Haven't done it in a while now. And we do similar with the chicken in a crockpot, eat it as taco salad adding lettuce, tomatoes and whatever else we want.
